Whipped Feta and Cottage Cheese with Balsamic Strawberries on Toasted Garlic Bread

Ingredients:

For the Whipped Feta and Cottage Cheese Spread:

  • 4 oz (115g) feta cheese, crumbled

  • 1/2 cup cottage cheese

  • 1 tablespoon olive oil

  • 1 clove garlic, minced

  • Salt and pepper to taste

For the Balsamic Strawberries:

  • 1 cup strawberries, hulled and sliced

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon honey or maple syrup (optional)

  • Fresh mint leaves, thinly sliced, for garnish

For the Garlic Bread:

  • 1 sourdough loaf, cut in half

  • 4 tablespoons unsalted butter, softened

  • 2 teaspoons dried oregano

  • 2 teaspoons garlic powder

  • 1 teaspoon salt

Instructions:

  1. Preheat your oven to 375°F (190°C).

  2. In a food processor or blender, combine the crumbled feta cheese, cottage cheese, olive oil, minced garlic, salt, and pepper.

  3. Blend the ingredients until smooth and creamy, scraping down the sides of the bowl as needed. Adjust seasoning to taste.

  4. Transfer the whipped feta and cottage cheese spread to a bowl and set aside.

  5. In a small bowl, toss the sliced strawberries with balsamic vinegar and honey or maple syrup (if using).

  6. Let the strawberries marinate for about 10-15 minutes, stirring occasionally, to allow the flavors to meld together.

  7. In another bowl, mix together the softened unsalted butter, dried oregano, garlic powder, and salt until well combined.

  8. Spread the garlic butter mixture evenly over the cut sides of the sourdough loaf.

  9. Place the buttered sourdough halves on a baking sheet, cut side up. Bake in the preheated oven for about 10-12 minutes, or until the bread is toasted and golden brown.

  10. Once the garlic bread is toasted, remove it from the oven and let it cool slightly.

  11. Spread a generous amount of the whipped feta and cottage cheese mixture onto each slice of toasted bread.

  12. Top the whipped cheese spread with a spoonful of balsamic strawberries, ensuring to include some of the balsamic marinade.

  13. Garnish each toast with thinly sliced fresh mint leaves.

  14. Serve the whipped feta and cottage cheese toast with balsamic strawberries and mint immediately as a delicious appetizer or snack.
